Jam Tartlets

Ingredients

3 Cups Flour

500 gm Butter (or Margerine) - keep 1/2 aside for later to grate on top of the rolled-out dough.

1 Tin Cream

Apricot jam


Method

1. Grate 1/2 of butter into flour.

2. Mix flour and butter together with a wooden spoon.

3. Gradually add and mix in the cream, then use hands to finally mix - mixture should be a bit moist.

4. Place dough on a floured surface and knead slightly. Roll out into a large size.

5. Grate the other 1/2 butter on top of the dough.

6. Fold over twice into a quarter of the size.

7. Cover and allow to stand for 10 minutes. Repeat this step.

8. Third time roll out into a large size and quite thinly.

9. Slice up into small squares.

10. Place small portions of apricot jam into the centre of each square.

11. Fold over the 2 edges, pinching / sealing the top section so that they will not open when baking.

12. Bake at 180 degrees for 10 minutes or when the tarts start turning a light brown.

13. Sprinkle icing sugar over the tartlets.
