Fluffy Chocolate Cake

My late Mom's fluffy chocolate cake, which i would like to share. it was one of her favourite recipes and well remembered.

Ingredients:

1 Cup Flour

2 ½ tablespoons Cocoa

1 pinch salt

1 cup sugar

3 Eggs

½ cup Oil

½ Cup water

1 teaspoon Vanilla essence

1 teaspoon coffee

2 teaspoons baking powder

Method:

Mix dry ingredients together

Separate egg yokes from whites

Add oil, water and vanilla essence to egg yokes and mix together.

Mix into dry ingredients

Beat whites of eggs until stiff – fold gently into mixture

Place into greased pan and bake for 25 – 30 minutes on 180ºC.

Icing:

¼ cup Golden Syrup

2 dessert spoons butter

2 ½ tablespoons cocoa

Mix together and spread over cake

(this makes a small cake, double ingredients to make a larger one)

You will see from the above 2 photos, I used different baking pans. The first cake is the original. The second one I warmed fresh cream and caramel and poured it over the top of the cake and then sprinkled chopped hazel nuts on the top.
