Chicken / Lamb Curry

Ingredients:

1 Pack of chicken (portions of your choice) / 1 pack of lamb cut into medium size pieces.

1 onion – chopped

2 heaped teaspoons of mixed masala

2 teaspoons of garlic, ginger and chillies mixture

4 potatoes

1 tin of peeled/diced tomatoes (blend optional)

1 Bunch of Coriander – cut up.

2 teaspoons salt

Method:

Heat a little oil in a medium- size pot.

Add chopped onions. Fry until they start becoming brown.

Add mixed marsala and garlic, ginger & chilli mix.

Wash chicken/lamb pieces and add to the curry mixture, stirring gently so that the ingredients are evenly spread.

Add half of the coriander.

Add a little water and allow to cook on a low to medium heat, for about 45 minutes (1 hour for lamb).

Sprinkle chicken/lamb with Salt

Peel and cut up potatoes into cubes. Add to curry.

Allow to cook until potatoes are almost soft – about 20 minutes.

Add tomatoes and little salt and sugar

Stir and allow to cook for another 15 minutes.

Sprinkle the rest of the coriander

Serve with Basmati or Jasmine rice. If you want to add a yellow colour to your rice, add 1 teaspoon of turmeric while boiling (add a bit more if you want your rice darker).
